Here's a recipe that's perfect for breakfast, brunch, lunch, or as a side for dinner. Jim Gilles, from Hill View Farms Meats in Owensboro, KY, has adapted a recipe that was once shared with his family. He has doctored it up and is sharing it with you so you can try it at home. Here's how to make a delicious Squash Patty Fritter.

1/2 cup Cecil Farms jalapeno pepper, seeded and chopped
2 cloves of garlic, minced
2 eggs beaten
3/4 cup all-purpose flour
1/2 cup Boone Creek Creamery grated Parmesan cheese
1/2 cup Country View Creamery grated mozzarella cheese

1/4 cup olive oil
CAJUN DIPPING SAUCE (optional)
1 cup mayonnaise

*combine all ingredients until blended*
DIRECTIONS:

2) In a large nonstick skillet over medium heat, warm oil.
3) Once oil is hot and simmering, add 1/2 cup to 3/4 cup size portions of vegetable mixture to the oil leaving a few inches between each scoop.
4) Cook two to three minutes on first side, or until golden brown. Flip and cook until second side is golden brown, an additional two to three minutes.
