SQUASH PATTY FRITTER

1 cup Hill View Farms Bacon, cooked and chopped

4 cups of grated Cecil Farms zucchini and/or yellow squash

1/2 cup Riney Farms chopped onion

1 Fischer Farms red pepper

1/2 cup Cecil Farms jalapeno pepper, seeded and chopped

2 cloves of garlic, minced

2 eggs beaten

3/4 cup all-purpose flour

1/2 cup Boone Creek Creamery grated Parmesan cheese

1/2 cup Country View Creamery grated mozzarella cheese

2 tablespoons Full Boar BBQ all-purpose seasoning

1/4 cup olive oil

CAJUN DIPPING SAUCE (optional)

1 cup mayonnaise

2 teaspoons Dan-O Cajun Seasoning

1 tablespoon tomato paste

1 teaspoon olive oil

*combine all ingredients until blended*

DIRECTIONS:

1) In a large bowl, combine all vegetables, bacon, flour, seasoning, egg, and cheese.

2) In a large nonstick skillet over medium heat, warm oil.

3) Once oil is hot and simmering, add 1/2 cup to 3/4 cup size portions of vegetable mixture to the oil leaving a few inches between each scoop.

4) Cook two to three minutes on first side, or until golden brown. Flip and cook until second side is golden brown, an additional two to three minutes.

5) Remove from skillet and place on a cooling rack or paper lined plate.

6) Repeat steps 3 through 5 with rest of the mixture.

7) Serve warm with a dollop of optional Cajun sauce.
