Make a Single Serving, Delicious Coffee Cake in a Mug [RECIPE]
If you are looking to warm up with a delightful dessert but don't want to heat up the whole oven and make an entire panful, try a coffee cake mug dessert. I made this last night and though I didn't get any pics it's delicious, easy and turned out much better than you'd think a microwave dessert would.
Ingredients
- 1 tbsp soft coconut oil or butter
- 1/4 cups all purpose flour
- 2 tbsp sugar
- 2 tbsp apple sauce
- pinch of baking powder
- pinch of salt
- 1/4 tsp vanilla
- 1 tbsp walnuts or raisins
- Topping: 2 tbsp uncooked oatmeal, 1 tbsp butter, 1 tsp brown sugar and sprinkle of cinnamon
Directions
Mix first seven ingredients in the mug til well mixed. Pat top even with spoon. Mix topping in a separate bowl and sprinkle on top of batter. Cook in microwave 50 seconds. Check and cook an additional 15 seconds if not done. Top with ice cream or whipped cream.
