This Greek Spinach Salad Shouts Out Summer Flavors [RECIPE]
I absolutely LOVE this salad! It’s one of the most flavorful salads I’ve ever had and I want to share it with you. I enjoy a salad most days here at the station thanks to my wonderful wife, Jenny, who actually enjoys making them. Over the past couple of years, she’s experimented with different combinations for my salads, and with this one she struck gold!
For the purpose of the picture, Jenny and I didn’t mix the ingredients together. The spinach is on the bottom with the additional ingredients on the top so that you can see them better. Here’s what you mix together for a salad that has enough flavor to make the pickiest salad eater take notice:
Over a bed of spinach leaves, mix in cut up grape tomatoes, broccoli heads, sliced bell peppers, real bacon pieces, dried blueberries and crumbled Feta cheese. Add diced ham or chicken, if you’d like. Use the salad dressing of your choice, but my preferences are a Greek vinaigrette or a sweet spinach salad dressing.
This salad is not expensive to make and it screams of flavor! Enjoy!
