Whether it's ribs, pulled pork, or beef brisket the starting point for great barbecue is a great dry rub. So here's a recipe for a basic rub that you can modify to your own taste.

3 tablespoons sweet paprika
3 tablespoons chile powder
1 tablespoon salt
2 teaspoons freshly ground black pepper
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons dried thyme
2 teaspoons dried oregano
2 teaspoons yellow mustard seeds
1 teaspoon ground coriander
1 teaspoon celery seed
1 teaspoon cayenne pepper

Mix all the ingredients together using your finger to break up any lumps then store in an airtight jar.

Use the rub liberally on the meat before firing up the grill.
