Here it is February and I'm feeling a little guilty over not keeping my New Year's resolution. Know what I resoluted? Yeah, the old 'eat healthier.' So, this weekend I started scouring my cookbooks with one mission in mind: find healthy alternatives to bad guilty pleasures.

One of my big vices is McDonald's chicken nuggets. While, the nuggets aren't too terribly bad on the nutrition scale, they are fried and I've heard horror stories about how they are made. So, I decided to find a baked recipe that may be even a little better than the MikkyD's version. You can also freeze these and pop them in the oven or microwave for a quick after school snack.

Baked Chicken Nuggets

  • 1 pound ground chicken
  • 1/2 cup crushed saltines
  • 3 tbsp french fried onions
  • 1 tablespoon chopped parsley
  • 1/4 cup Parmesan
  • 1 tsp lemon pepper
  • salt to taste
  • 2 cloves garlic, minced
  • 1 egg, whisked
  • 3 tablespoons olive oil

Preheat oven to 400°F, setting rack to upper third part of oven. In a large bowl, using your hands, gently mix together all ingredients. Shape into chicken nugget size and shape flattened balls and place a few inches from each other on a foil-lined, sprayed baking sheet.  Bake for 15-18 minutes, turning once.
