My cup is full. My cup runneth over. My cup has Caprese in it!

Patty Millay, from Owensboro, has created a fun appetizer that will be perfect for any holiday gathering you're hosting or holiday table you're preparing. Honestly, it would be the perfect addition to any summer function too. Patty has whipped up and is sharing a recipe for Caprese Cups.

But first, you may be wondering- what in the heck is Caprese?

It's a combination of tomato, basil and mozzarella that I personally find delicious.

As you can see, Caprese is relatively simple. It's three ingredients, a drizzle of oil or balsamic, some salt and pepper to taste (if you please), and you're done. However, don't by fooled by its simplicity.  Caprese is refreshing and delicious. I will occasionally have a Caprese salad for lunch or as an appetizer.

Patty's Caprese Cups give the idea a new, creative twist! She says, "This is the perfect solution for any occasion that asks you to bring a dish!  These Caprese cups have a ton of flavor and takes only 10 minutes to make!"

HOW TO MAKE CAPRESE CUPS

Salami slices
8 oz Mozzarella Pearls
1 pint Cherry Tomatoes
1 cup Olives
1 cup Banana Pepper Rings
Salt and Pepper
Balsamic Glaze
DIRECTIONS:
Add your salami slices into a muffin tin to form a cup.  Patty says there is no need to grease the tin. Bake at 400 degrees for 5-10 minutes.
In a large bowl, add the mozzarella pearls and 1 cup of cherry tomatoes (halved or quartered).  Add the olive of your choice (Patty likes to use the red pepper filled olives).  Add the banana peppers then sprinkle with salt and pepper to taste.  Patty suggests using more pepper than salt.  Toss all together and set aside.
Remove salami cups from the oven, then add your filling to each cup. Plate up the cups and serve!
Patty says you can easily customize this dish to your personal taste.  She recommends going with a 'pizza' approach- using ham, mozzarella, sun dried tomatoes and pepper rings or even large pepperoni slices with mozzarella and your favorite pizza toppings!
