BLUEBERRY AND LEMON MUFFINS

2 eggs

1/2 cup melted butter

1 cup sugar

1 cup yogurt

2 cups flour

1 tsp baking powder

1/2 tsp baking soda

1 tsp grated lemon peel

1 cup blueberries

Directions:

Have oven at 375 degrees. In large bowl beat together eggs, sugar, melted butter, and lemon zest. Stir in yogurt. Blend dry ingredients, remove one tablespoon and add to blueberries. Then add to wet ingredients. Mix until just blended. Fold in blueberries. Place in muffin tins. Bake 25 minutes, makes 12-14 muffins.
