Power Breakfast Recipe: Cheesy Egg Toast with Fresh Veggies

INGREDIENTS

  • 1 piece whole wheat toast
  • butter, margarine or olive oil
  • salt/pepper
  • 1 egg
  • 1 tbsp shredded cheese

OPTIONAL

DIRECTIONS

  1. Butter bread on one side. You can brush olive oil on for a healthier option.
  2. On the other side, smoosh down a rectangle in the middle using spoon - don't tear bread. Brush sides around rectangle with olive oil or butter. Place in a medium-high preheated pan.
  3. Salt and pepper inside of rectangle.
  4. Crack egg and insert into rectangle. Don't break the yoke.
  5. Salt and pepper egg.
  6. Cover in cheese.
  7. Cover pan with a lid - heat for six minutes.
  8. Preheat broil to 350 degrees.
  9. After six minutes put under broiler for 3-5 minutes depending on how 'done' you want your egg.
  10. Top with tomatoes, avocado, salmon cream cheese and green onions.
