I eat a pretty healthy diet, so usually mac and cheese is found nowhere near my table. But, this weekend, I was feeling kind of yucky and wanted some comfort food that was easy to make. What I concocted was really good - too good. Warning: read this recipe at your own risk. 

Ingredients

  • 1 box premium mac and cheese - I get the Kroger kind that is a box of noodles and a package of creamy cheese that you just pour and stir.
  • 2 eggs
  • 1/4 cup milk
  • 1/3-1/2 cup shredded cheese (depending on how cheesy you want your mac and cheese to be)
  • salt/pepper
  • Panko bread crumbs or crushed Ritz crackers
  • Parmesan cheese (OPTIONAL)
  • Paprika (OPTIONAL)
  • Yummy mix-ins (OPTIONAL): prepared bacon, ham, chicken, sausage, hamburger, peas, broccoli, tomatoes, etc.

Directions

  1. Preheat oven to 350 degrees
  2. Make boxed mac and cheese to manufactures directions. Before adding the cheese, rinse noodles with cool water until the noodles aren't blistering hot. You don't want to cook your eggs just yet.
  3. Pour mac and cheese into sprayed or lined 8x8 pan.
  4. Mix eggs, milk, salt, pepper, cheese and additional yummies (see above) in a bowl. Pour mixture over prepared mac and cheese. Fold gently in.
  5. Top with crumbs or Panko. You can also add a sprinkle of Parmesan cheese and paprika for a kick.
  6. Bake at 350 for 30 minutes until cooked all the way through.
  7. SERVE

So there you go. It's easy, it's fast and it's filling. This is a great recipe for potlucks and picnics too.
